It is early summer and so it is time for some yummy yummy Strawberry Cheese Muffins. So lets go to the fields and harvest yourself a basket full of sweet and juicy strawberries. Or just meet your trusted fruit dealer. Or just get some from the supermarket round the corner. 😉 This simple and easy recipe fits perfectly to a delicious asparagus meal or for a Sunday coffee.
So lets see what you gonna need to bake six Strawberry Cheese Muffins:
- 125 g of fresh strawberries
- 75 g good butter
- 50 g of sugar baby
- 1/2 package vanilla sugar
- 2 chicken eggs
- 120 g of flour
- 1 spoon icing sugar
- 1 teaspoon baking powder
- 1/4 teaspoon soda
- 1 pinch of salt
Heat up your oven at 356 Fahrenheit. Butter your muffin mold. Clean and cut the strawberries in slices. Whisk up the butter with the sugar and stir in the curd, an egg and an egg yolk. Next step is to mix the flour with soda, vanilla sugar and baking powder. Work this mixture into your dough. Whip up the last egg white and fold it into the dough gently.
Pour the mixture into the mold and press the strawberries slices in. Now it is time to bake your Strawberry Cheese Muffins for about 20 to 25 minutes. Leave your muffins to cool down and garnish them with fresh strawberries and some icing sugar.
