this is an original German potato salad recipe cooked by Philipp the Kraut. 😉 Potato salad is named `Kartoffelsalat´ in Germany. We have several different variants which are all a little bit different from region to region and from family to family. But two main recipes for potato salad are to distinguish, with mayonnaise or with oil & vinegar. This recipe is without mayonnaise but with bacon. Yes! BACON!!!! 😉
Kartoffelsalat goes traditionally with all kinds of sausage. A lot of families celebrate Christmas Eve with potato salad and Bockwurst or Wienerle. A good mustard is a standard too.
So lets see what ingredients you gonna need to cook 4 portions of the original German potato salad recipe:
- 6 big waxy potatoes
- 100 g streaky bacon
- 1 onion
- 2 garlic cloves
- 10 small cocktail gherkins
- 2 spring onions
- 2 hard boiled eggs
- 1 teaspoon caraway
- 2 bay leafs
- 1 spoon sugar
- white wine vinegar
- spoon of medium mustard
- 2-3 spoons of gherkins water
- sausages for 4 portions, Bockwurst is great & classic
Now lets do this!
Set up a pot and cook the potatoes with skin. Meanwhile you cut the bacon into small pieces and fry them slowly till they are salty and crunchy. Yummy yummy! Now you need to clean and cut the vegetables. Thin and small pieces are great cause they bring all the aroma better together when the salad got mixed. The cooked eggs need to be chopped too.
After about 30 minutes the potatoes are cooked. Peel them warm and chop them into a salad bowl, 1,5 cm to 1,5 cm pieces are perfect. The pieces should not be too small cause otherwise you will end up with mashed potatoes. 😉
Add garlic, onion, spring onion, gherkins, bacon and the eggs to the bowl and mix everything gently. Now it is time to add water, gherkins water, vinegar, salt sugar and spices. Yes more or less everything else apart from oil.
German potato salad recipe needs more liquids than you would expect cause the potato soak up a lot of it. So you go step by step. Add water and mix the salad. It should be creamy and oozy.
Caution! Oil or any greasily substance must be added at last. Because oil will seal all other ingredients which prevents the sugar, salt and spices to get into potatoes. But when it finally comes to add oil. Do not forget to add the cooking fat from the pan which was used frying the bacon. It gives the recipe a lot of flavor.
Now everything is ready to celebrate! German potato salad tastes best if you store it overnight in the fridge. But let it warm up a little bit before serving. But the salad is also delicious directly after the preparation when the potatoes are still a little bit warm. A beer of your choice suits our Kartoffelsalat perfectly!
